Agustí Torello Sibill moves away from the family business of well-known Cavas, Agustí Torelló Mata, and together with his sons, begins a new project elaborating wines at their own cellar with his own son, Agustí Torelló Roca, as the enologist. The sparkling wine is elaborated in the wine region of Penedès, and although they are in the heart of the cava production region, Sant Sadurní d’Anoia, they produce their sparkling wines under the new brand, CORPINNAT, which stands for a collective European Union brand established with the aim of distinguishing great sparkling wines made in the heart of the Penedès from 100% organic manual harvest, 100% vinification on the premises of the winery, and long ageing.

Production:

Elaborated with Macabeo and the red grape, Garnacha, applying ecological practices and regenerative dry-farmed viticulture in their vineyards.

Traditional method of elaboration. Harvested by hand, 100% vinified on the property with indigenous yeasts. Manual clarification in racks, with a minimum ageing of 15 months. Disgorging without freezing. Residual sugar: 5 g/L.

Tasting Notes:

Salmon-pale colour with fine and persistent bubbles and a bright and clean nose of fresh red fruit, strawberries, and wild berries with pastry notes. Intense and fresh on the palate, flavourful with a creamy texture and a deliciously refreshing acidity.
