Today, Cavas Llopart are consolidated as a high quality product, keeping themselves loyal to the roots using the exclusive craft elaboration methods, in accordance with the strict traditional system “Champenoise”, they elaborate their cavas at the family’s country estate “Can Llopart de Subirats”, situated in a mountainous area, geologically formed 22 million years ago, and where it has been found a great number of molluse fossil, the balanced grounds with a moderate level of nutrients and organic compost and the appropriated microclimate with a moderate rainfall, shape the perfect setting for vine cultivation, resulting in concentrated, balanced grapes of great fineness which will define the personality of all their cavas and wines.
