Cold maceration for 6 days. Fermentation takes place in stainless steel tanks at a controlled temperature with pumping over and periodic stirring of the lees. Aged for 5 months in 300-litre Allier French oak barrels.
Tasting Notes: Freshness on the nose, red fruit, and a touch of oaky notes. Rich and velvety with ripe tannins and a lingering finish.
Notes: Because it has been bottled unfined and without any stabilisation treatment, it could be possible that a natural sediment may appear over time. Drink now and for up to 5 years.
THE WINERY:
Pago de los Capellanes is a relatively young winery, founded in 1996 when Paco Rodero, the son of Doroteo Rodero, and his wife Conchita Villa recovered the family vineyard, expanding the property by acquiring neighbouring plots.
The winery is located close to the village of Pedrosa del Duero in the heart of the Ribera del Duero Region, and its vineyards are divided into 35 parcels, from which their grapes are vinified separately. The soil is made up of clay and chalk. The vineyards are planted only with Tempranillo or Tinto Fino grapes, the variety indigenous to the region. They only harvest 5000 kg of grapes per hectare, well below the 7,000 kg allowed by the Regulatory Council of the Ribera del Duero Region to guarantee the highest quality.
