The grapes were carefully selected in the cellar on the sorting table, skidded, and then skin macerated for 12 hours before being fermented in clay amphorae of 700 litres at 17ºC.
Aged on its lees for 5 months in the same amphorae.
Tasting Notes:
Colour light golden yellow. Good intensity and complexity; aromas redolent of ripe stone fruit, displaying a touch of green pepper and dried fruit. Broad with volume on the palate, with balancing acidity and a nicely light bitter finish.
Cava Vives Ambrós is a small family business, the inheritors of a winemaking tradition passed on along a number of generations. The Cellar is located in the small village of Montferri in the Alt Camp, Tarragona. They elaborate a wide range of still wines and sparkling wines, faithfully adhering to their philosophy of practicing artisanal work both in the vineyard and in the winery. All the work is carried out manually, from the remuage in the racks to the disgorgement, the artisanal wax seal, and the printing of the disgorgement date at the back of the label on each bottle.
