Production:

The grapes come from a selection of 80–100-year-old Tinta de Toro (Tempranillo) vines producing low yields. The wine is organically farmed using biodynamic principles.

Manual harvest. Fermentation takes place in concrete vats at a controlled temperature of 24ºC. Short ageing of 3 months in oak barrels. This wine has not been filtered or clarified using aggressive methods to preserve its natural characteristics.

Tasting Notes:

A fresh, aromatic, flavour-filled wine. It displays a good intensity of dark fruit aromas, such as blackberries and blueberries, combined with mineral notes. A fresh entry on the palate with rich flavours, complexity, and good fruit extraction. Smooth, pleasant, and very easy-going wine.

Note: To be drunk over the next 3–4 years.

The vineyards are cultivated completely ecologically, avoiding any use of chemical or synthetic fungicides, herbicides, or insecticides. Matsu represents the essence of a natural wine.
