Production: 

The exceptional Harvest is obtained from hand-selected 100% Pedro Ximenez grapes; it is the result of a large and complex process of elaboration. Hand-harvested slightly overripe grapes  "late harvested". The delayed picking makes it possible to achieve exceptional aromas, flavours, and a soft aftertaste of natural sweetness. Fermented with its own skin and aged on its lees, it was subjected to a controlled "battonage system" during four months in American oak butts.

Tasting Notes: 

Intense golden colour, clean and bright. Good intensity of aromas, figs, raisins, and plum fruits. Dense, rich, creamy, and smooth-textured with a mouth-filling palate, raisiny, toasty flavours, hints of natural sweetness, and acidity. Pleasant and long aftertaste.

Notes: Drinks well now, and thanks to its difficult and specific way of production once bottled, this wine can maintain and increase its qualities for years. It is recommended to keep the bottle upright during storage in the cellar.

Ximénez-Spínola is a small, independent family winery, specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production, is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
